Radar, not a proximity sensor

Microwave radar tracks the motion of a hand precisely enough to tell several gestures apart, so power and fan step are set without touching anything.

Ignition starts extraction. Wi-Fi control runs it from anywhere. A three-minute delay finishes the clearing after cooking stops, then it powers down.

A high-precision sensor reads the air and sets the fan to match, and keeps reading after the pan is off, so the extraction stops when the kitchen is actually clear.
